Summer Oats

Ingredients:

  • 350 g Monte Castello Dehusked Oats;
  • 1 large courgette;
  • 1 pepper;
  • 1 carrot;
  • A few basil leaves;
  • Chilli to taste;
  • Salt to taste

    Preparation

    Boil the Monte Castello Dehusked Oats in abundant salted water for 25 minutes after boiling (13 minutes if you use a pressure cooker). Dice the vegetables and after pouring a drizzle of oil into a saucepan, cook the vegetables with the chopped basil; sauté the vegetables until cooked. When the vegetables are cooked, add the oats and season with salt and pepper. Serve lukewarm! It is also excellent as a cold salad.
