Hummus
Ingredients:
- 400 g of dried chickpeas;
- 2 spoons of tahina;
- Juice of ½ lemon;
- 1 small clove of garlic;
- ½ teaspoon of cumin seeds;
- Sweet paprika to taste;
- Extra virgin olive oil to taste;
- Salt to taste
Preparation
Soak the Monte Castello Chickpeas for about 8 hours in plenty of water. Boil the chickpeas in salted water for about 60 minutes, 30 minutes if using a pressure cooker. When cooked, drain the chickpeas (if you use boiled chickpeas, drain them from their water). Pour all the ingredients into a blender and blend by adding the lemon juice and, if necessary, a few tablespoons of hot water until creamy. Finally, salt your hummus. Pour into a bowl, add extra virgin olive oil to taste, paprika, cumin seeds.
