Soup with cicerchia
Ingredients:
- 300 g Monte Castello Cicerchia ;
- 50 g of bacon;
- Tomato sauce;
- 1 clove of garlic;
- Extra virgin olive oil to taste;
- Broth to taste;
- Grated Parmesan to taste;
- Salt to taste;
- Pepper to taste
Preparation
Wash and soak the Monte Castello Cicerchie for 12 hours. Drain them well and transfer them to a pot with 2.5 liters of water. Bring to a boil and cook for about 40 minutes, 20 minutes if you use a pressure cooker. In a saucepan, fry the garlic, which you will then remove, and the diced bacon. Add the tomato sauce, salt, pepper and cook. Now place the Cicerchie in the pot adding broth as needed until the right consistency. Serve the soup as soon as it is ready, adding a drizzle of raw oil and grated Parmesan cheese.
